Sebastian Leyer took the reins at Le Faubourg in the Sofitel Berlin on Kurfürstendamm in January 2020. As the new head chef, he intends to preserve tried and tested classics and introduce more regionality and sustainability. So the concept will remain “modern French and casual chic” but the 32-year-old Potsdam-born chef will bring his team back to the basics. In doing so, he will concentrate on the French techniques and classic preparation methods learned from his grandmother. His team will work largely with sustainable produce purchased directly from smallholders such as Wolkensteiner Hof, Artgerecht & Glücklich and Odefey & Töchter and with meat from animals that have been treated humanely. From now on, vegetarian dishes at Le Faubourg will receive the same special attention as meat and fish.
